Maybe I do like pork

Herbed Pork Roast
Crash Hot Potatoes
Corn
Apple slices
I’ve never really liked pork but letting this pork loin marinate all night in the spices made it so yummy. Love all of the flavors of the foods together. Yummy dinner.

Long time, no cook

The lack of recipe posts hasn’t been because I stopped posting them – it was because I stopped cooking. Summer got too busy so we ended up eating a lot of Mr. Goodcents and “fending” – the kids favorite thing to do. However, I’m back to cooking especially as the temps get a bit [...]

Breakfast for dinner

Made chocolate chip pancakes (used this recipe but used whole wheat flour in place of white flour), turkey bacon, scrambled omelet (using Egg Beaters) and fruit. Everybody had seconds. Was very yummy!

Fajitas

I’ve been making these fajitas for years. It’s pretty easy and healthy and it got my dad to start liking fajitas. We’re only home 1 evening this week and I have to be quick if I want to cook dinner so the onions and bell peppers were purchased pre-cut, the guacamole was store-bought [...]

Southwestern Surprise stew

Got this recipe from the Hungry Girl cookbook. It has lean ground beef, pinto beans, black beans, diced tomatoes, taco seasoning, packet of ranch dressing mix, minced onions and corn in it. It’s one of the yummiest tasting things I’ve made in awhile and very healthy to boot!

Healthy chimichangas

Saw a recipe for chimichangas posted on Marcy’s refrigerator and decided to try them out at home. Took this recipe and made some healthy alterations which included using very lean ground beef, fat free refried beans, whole wheat tortillas, low fat cheese and healthy butter.
Made the ground beef mixture in a wok skillet because [...]

Turkey burger virgin

I’ve never ventured into ground turkey land so tonight was a first and it won’t be the last. This recipe is time-consuming but it’s so good that 3 out of the 4 of us had seconds…including Andy, Mr. Red Meat Eater.
Also, we’re keeping local produce growers employed with the amount of fresh [...]

Fruited Chicken Salad over Couscous

This recipe doesn’t require you to turn on the oven or stove except very briefly to allow some liquids to boil (which only took about 2-3 minutes). That makes this recipe ideal for a day like today when our house is 84 degrees.
There are a lot of ingredients but most of the time is [...]

More fun food

Blake and I made a homemade pizza tonight using a store-bought natural crust, a jar of Ragu pizza sauce, 2% mozzarella cheese, fresh diced tomatoes, fresh basil, minced garlic and 4% lean hamburger meat. It was yummy…
